I am making cake balls for my sister's shower in 2 weeks, is it ok to make them now and freeze them? I am also making her a 4 tier cake for the shower and was hoping to get some things done before hand. Would the cake balls still be ok after 2 weeks in the freezer? icon_confused.gif

Yes you can. And they will be fine for 2 weeks (even longer).

Yep, I just ate 3 frozen ones last night. icon_smile.gif
If they bloom for some reason, use a small sifter and sift cocoa powder over them to cover it up (or powdered sugar if it's white chocolate). Unthaw them and make sure they're dry first, though.

I freeze undipped cake balls all the time. I let them thaw a little (not all the way) before dipping or the chocolate cracks on a lot of them - no idea why, but it's happened to me a lot! The dipped balls last forever with no refrigeration (I've kept them out for two weeks even in this unforgiving tropical climate where I live). I don't have any experience with freezing the finished ones, but you can dip them way ahead without freezing or even refrigeration and they'll be just fine.
