Help! I can't seem to get my cupcakes to be all the same size even if I measure the batter out. Some end up over flowing in the cupcake pan(and I have to end up trimming the edge), some are too big and some don't rise enough. Any suggestions??
get a spring action ice cream scoop. In the restaurant supply stores you can get them in several sizes. and use a level scoop in each cup and you will have even cup cakes, unless your oven is off and not heating evenly then you can have ones in the same pan looking differently.
the oven sounds right but I remember having this problem and it came to be my cupcake pans, once I bought new non stick pans I couldn't believe the difference!

I use the large scoop from Pampered Chef and they come out almost exact every single time. Best thing I ever purchased for my cupcakes!
thank you all for the suggestion, i use the mini ice scooper.. love it, a matter of fact i use the all three of my scoopers, also for cookies..

you could also get a flat kitchen weight scale. That way you can weigh how much batter you put in each cup and they all come out the same size. This is what I do. If got for about 45 - 47 grams in each cup. Last time I think I did 45 grams.
