I need some advice. I have a violin cake that I'm brainstorming at the mement. The customer would like chocolate cake with chocolate frosting, but since it's a carved cake with details I want a clean look.

I have never tried chocolate flavored fondant and don't know if it will give me the taste I'm looking for (more like a tootie roll). Has anyone ever covered a cake with modeling chocolate? The cake will 4" in height and around 12"x 6".

I can't answer the modeling chocolate part, but can tell you that Satin Ice chocolate fondant tastes JUST like a tootsie roll, HTH!

We use vanilla Satin Ice and it too tastes like Tootsie Roll. Our customers love it. Tired to make modeling chocolate using fondant and chocolate but it didn't work. Good luck..

I saw on Food Network that this one woman always uses modeling chcolate instead of fondant. It worked well on the fish she was making, which was flat and long like your violin, without a lot of sharp heavy edges. I think it would be fine.

Thank you guys! I wasn't sure about chocolate fondant, but now know it's an option icon_smile.gif I'm thinking I'll try the modeling first since I wouldn't have to order it and if it doesn't work then move to the fondant.

Hi I've used modeling chocolate to cover two of my cakes with wonderful results. They were each covered in different ways but the candy clay was easy enough to use and very tasty!! Good luck.

There is a well known male decorator that uses only modeling chocolate to cover his cakes. Can't remember his name though. Maybe someone will come to my rescue with his name. icon_lol.gif

I've used it mixed with fondant. Yummy.

I've used modeling chocolate to cover a cake because I preferred the taste but it was difficult because it doesn't have the stretch that fondant has. I had a hard time not having folds at the bottom and I didn't like the results. Maybe on a smaller cake it might work better.

I'm not positive, but I think it's Mike McCarey.
