I've got some left over cinnamon cream cheese icing and I'd love to pair it up with a peach cupcake, but I don't have a recipe. Does anyone have a fabulous & moist peach cupcake recipe they can share with me? I'm thinking if I had to come up with something from scratch I'm wondering if one of the following options might work.

a) Replace the milk in my scratch vanilla cupcake recipe with peach juice (which I'm not sure if I can find in the UK, so I might opt for the juice from canned peaches

b) Use my peach Lorann oil and add a few drops to my vanilla cupcake batter

c) Take either fresh or canned peaches, puree them and squeeze out most of the moisture in them so they end up the same consistency as canned pumpkin and use that as a substitute for the pumpkin in my pumpkin spice cupcake recipe

d) Puree canned or fresh peaches so they are really liquidy and replace 1/2 my milk or oil with the peach puree

What do you guys think? Would any of my options above work? Can someone share a good peach cupcake recipe please?

That sounds like a fab recipe. I vote for the peach nectar or puree.

So last night I pureed a whole can of peaches, squeezed out most of the moisture from them and used them in place of apple sauce in a cupcake recipe that I tweaked a little bit. The pureeded canned peaches (in light syrup) didn't have very much flavor, so although the cupcakes turned out alright (a little denser than my regular cupcakes) they didn't have very much peach flavor to them. I think I will try adding some peach extract, maybe some peach yogurt and sliced peaches to my next batch to see how they turn out. I really wish I could use fresh peaches, but I don't think they're in season yet. The ones here in the stores are hard :-S

I pulled a peach from my tree last nite. They still need about a week to ripen, but awesome anyway! Try some loran peach oil. Only need a few drops and tastes great without that bitter extract aftertaste.
