I have feen asked to do a pineapple cake for a friend's mother for mother's day. She wants the cake done up "fancy" (purse or something similar). I like to use a enhanced cake mix. Thanks for your response icon_biggrin.gif

I would just say take a white or yellow cake and swap out all the water for pineapple juice and add a can of crushed pineapple to it as well!

If you wanted an even stronger pineapple flavor, you could add a box of pineapple jello to the batter as well

Kahalstead just wanted to thank you for your help. And let you know what I ended up doing. I couldn't find the pineapple jello but I did find a DH pineapple supreme cake mix. I used pineapple juice for the water and added the crushed pineapple into the recipe and added vanilla flavoring to it. It smelled heavenly and made a super moist cake. Which is normally pretty good but not for a purse cakeicon_sad.gif Oh well the good thing about cakes is they taste good even when they fallicon_smile.gif Have a great weekend!
