I am still having tremendous problems with lop sided cakes. Any help would be greatly appreciated

I overfill my pans when I bake so that I can use my knife (I have one with a 22 inch blade) and cut it even with the top of my cake pan. That's how I get my cakes level. It works for me but someone else may have a better idea.

it might not be your cake... it might be when you ice it that it's not being iced the same height on all sides... I have a leveler from the home depot and I always use it when I am icing my cake to ensure it's level....

If you start with the Agbay leveler you'll be assured of a level cake to begin with. Then use a laser level to project a line around your cake and remove icing above that line.

The Agbay leveler is very expensive but if you do many cakes a week, it's worth it.
The laser is not expensive.

Yep. I got mine at Lowe's. Can't afford an agbay icon_sad.gif .

does anyone know how the laser works..to help level cakes...I to have a problem with cakes being lopsided. I have used the towel method to
press down on the cake after it comes out of the oven AND I use a
flower nail while baking..The cake looks even..So I guessing it must be the
icing...I just solved my own dilemma. LOL Any thoughts...I am doing an anniversary cake in June..

bonton, "the cake looks level" doesn't cut it. It's not level. You have to level it.

The laser is less than $10 at the big box hardware store.

now I know what I want for mother's day ... a laser level! Well, I'd love a Cricut but even Costco can't get the price under $300.00. Ok, it's 299.99 but you know what I mean!

Thanks Cheatize for sharing the picture...so you angle the light at the cake,
and any gaps would indicate the cake isn't level?

Yay a new toy!!! I love getting cake decorating tools at the home improvement store icon_smile.gif

Bonton: You really need to level the cake before even starting or no amount of fixing later is going to work. Have you tried sugarshacks video on buttercream? It was a life saver for me when I was learning! Even if you are covering in fondant that icing needs to be smooth and level or the problem multiplies. You can even use her method with smbc just leave out the viva step.

I level my cake using a serrated knife and remove the tops. That is how I was taught in school. (It doesn't always work)

Stupid question...but does a laser level level things like anything else...I mean... if the countertop is slightly "off" will your cake be slightly "off" too?

I do get a little nervous about measurements...I end up usually trusting my eye more than anything concrete.

Wow that laser leveler looks like a perfect way to get things level. I've just been using a seam guage tool to make sure my cakes are level at the top edge!

Also make sure your oven is level and that your decorating surface is level. I found my countertop was level but my table was not. I made sure that got taken care of.

the cake has to be level, but then you have to ice it level. but the most important thing in a stacked cake is that your supports are level, even if the cakes are not.

I'm still confused on how to use the level on the top and on the sides of the cake. My trouble tends to be more on the sides of the cake then the top. I hate to be a bother but can someone explain it to me icon_smile.gificon_sad.gificon_redface.gif

Sides? Do you mean before icing? If so are you using straight sided pans.

If you are new at this, like me, I will recomend Sugar sharck's DVD's. I can't afford an Agbay right now, but I have learned so much from her DVD'S.

How are you feeling your cakes? and when you cut the leyers, are you making sure to match the sides? you can do this by marking it with tooth picks, to make sure the sides match.. I hope I explained it right..
