I am making a wedding cake for my brother-in-law for this saturday. I just took all three Wilton classes this summer (after they asked me to make the cake). I am pretty nervous. The cake is a 14" double layer bottom, a 10" double layer stacked directly on top, push-in pillars, and finally, a 6" double layer on top.

The Wedding is Saturday at 2pm. I am helping decorate the hall Thursday and Friday. The rehearsal dinner is Friday night. I plan on taking the cake in three separate boxes with me Friday morning and refrigerating the cakes at the hall.

I have already made all the layers for the 10" and 6" and placed them in my freezer. The 14" layers won't fit.

How soon can I make the 14" layers, ice them, and then leave them on my counter?

Can I place my dowel rods in the 14" layer at my house to save time doing it at the hall the morning of the Wedding?

I guess this is my plan...Since I'm busy Thursday decorating I must finish most of the cake Wednesday (say the 10" and 6" layers) and then the 14" layers Thursday night.

I don't want to serve old cake, but I'm having trouble with the timing. My husband is the best man and my two-year old son is the ring bearer. It's easier for me to work at night after my son is in bed.

I'm just looking for advice.

Thanks,

April

April,

I would bake on wednesday or thursday. Ice thursday. Decorate on friday. I would assemble the two bottom tiers at home and place the pushed in pillars in place. Then on Saturday all you have to do is place the top layer on the cake and the cake topper if one is being used. I deliver all my cakes cold so that i minimize any shifting that can take place during transport. Makesure you have you ac in your car cranked up nice and cold.

You should be able to bake the 14 on Wed. night and crumb coat. Then after decorating the hall Thur frost the cake. You can then leave it till Fri after decorating the hall and finish you decorations for the cakes. I would transport in three separate boxes and assemble at the hall and put on the final borders, cake topper, etc. Yes, you can dowel at home to save time. Just remember to take a "repair kit" with you for any mishaps.

Good luck and be sure to post your cake! It sounds beautiful!!
