Lime & Spinach Cupcakes

Hi,
I was wondering if anyone has made these cupcakes? I am making them tomorrow but the recipe did not say the yield for the cupcakes. They are due on Friday and I was intrigued by the recipe and just looking for an occasion to try them.
Any help would be greatly appreciated.

I remember seeing a thread on this not long after receiving the first issue of cc magazine. Someone did make them but I can't remember who. I will continue to look for that thread. In the meantime maybe someone will chime in that knows thumbs_up.gif

Seriously- let me know if you like them. Might be the only way to get my kids to eat spinach thumbs_up.gif

I made them. They were very moist but also very bland to me. I'm not good at doctoring baked goods, but it seems like they need the flavor punched up. Didn't really taste the lime at all.

I'm glad you answered. I remember that someone made them but couldn't for the life of me remember who. Now I can stop searching thumbs_up.gif

I was so intrigued... but didn't have the balls to try it. I wonder what could be added to make it yummier?

They were a pretty color, like in the CC magazine. I haven't used any of them, since I don't do many cakes, but does Lorann oils come in a lime flavor? As I said, I couldn't taste the lime, but I did taste a little of the spinach. I wanted them for St Patrick's day for the color, but ended up throwing them out.

I made them, also, with cream cheese icing. Thought they were great. DH and DS (who rarely eat sweets) liked them. I wouldn't tell anyone what they were until they tasted them. Of course, they were shocked about the spinach and the moms wanted the recipe for the obvious. Lime taste was subtle. I believe I got 24 - 26 cupcakes out of the recipe. HTH

Thank you all! I was wondering about the taste as well. I am making them for my husband to take to work. They're all bringing in a dozen cupcakes and they're supposed to be trying something different. I told him not to tell anyone what it is until after they've finished. Should be interesting!

I am so glad you like the cupcakes. I agree, they could use more lime flavor, a lime extract or oil would be great, as the lime juice kind of gets lost. The lime frosting really adds to the sour bite of the cupcakes, but I think i'll try them with cream cheese frosting, that sounds delicious!

I definitely wanted you all to try something new, and it is a great way to get some veggies into the kids.

I can come up with weirder things so stay tuned to the strangely good section of the magazine!

Well I just talked to my husband about the reactions-they liked them until they found out it was spinach. I did add a bit more lime juice and zest and the frosting was really "limey". I was going to use cream cheese but they were in the car about three hours before they were dropped off. I think they were good myself.

Came across the Spinach Lime Cupcake recipe this week while I was looking for a recipe for a cake or cupcake for work. Well I made them and they were such a hit. I heard that people were talking about how good the cupcakes were. I definitely tasted a hint of lime and I used the SMBC frosting. Was a wonderful pairing because the frosting didn't overpower the lime taste. Thanks so much for a great new cupcake flavor, it will definitely be added to my recipe book. The only concern I had was the cake didn't rise as high as I would have liked. I'm wondering if I should have baked them a little longer as I filled the liners 3/4 full but they didn't come to the top of the liner.
