Hi, I am searching for the perfect yellow cake recipe; I have tried a few from the Wilton books and Food Network, but not what I am looking for. I want a recipe that the cake will come out looking like the Duncan Hines cake mix, nice and fluffy but with homemade taste if possible.

You won't get a cake as light as DH without using a mix. Scratch cakes are just denser. This is my favorite yellow cake recipe. It's really easy too! I can't remember where I got it.

Easy Yellow Cake

2 3/4 c. all purpose flour
3 tsp. baking powder
1 tsp. salt

2 c. granulated sugar
1 c. shortening
2 tsp. vanilla
4 lg. eggs
1 3/4 c. milk

Pre heat oven to 350 and grease and prepare pans. Sift together dry ingredients in a medium size bowl. In a large bowl cream shortening and sugar until fluffy, about 4 minutes. Add vanilla extract, then the eggs. Mix until just blended. Alternate adding flour mixture and milk in 3 parts, beginning and ending with flour. Mix until just blended. do not over mix! Pour into pans and bake 40-45 minutes. Makes one 9x13 or 2 8" or 9" layers.

Try Sylvia Weinstocks I think you will love it. I get rave reviews on it all the time.

I use the Mermaid Bakery Vanilla Butter cake recipe on CC...that counds as yellow cake..right? right??????

I don't get it...why dont't you just use DH then?

Scratch cakes are more dense but much more flavorful. I use Sylvia Weinstocks. If you want a lighter crumb try a chiffon cake.
