Hello, this is my first post
I was wondering how I am meant to store my cake? It is a mud cake with a buttercream crumb coating and fondant on top. I understand the buttercream needs refrigderation but have been told not to refridgerate fondant as it will sweat. How long out of the fridge can I leave the buttercream?

buttercream does not need to be refrigerated unless you are saving git for a week or more. But a cake that is decorated with it can sit out for a few days. Sugar is a natural preservative. This cake straight from the mouth of my health inspector via me.

What sort of buttercream did you use? Buttercreams with butter or crisco with icing sugar, milk/water and flavouring can be left out for a few days and don't need to be refridgerated
Thanks for your replies! The buttercream is butter, icing sugar (I think it's called powdered sugar in the US) and a splash of milk So I can leave it out for 48 hours with no problems then?
I have seen numerous times on here the debate to refrigerate or not. I know I have also seen often that you do not need to refrig. buttercream but if you don't, doesn't yours get very soft/melt? I know I find it hard to decorate with when it is warm and with summer approaching...........Just wondering if others have this problem.
