I'm wondering what kind of white chocolate everybody uses. The only white chocolate I can find is Bakers white. Wilton white melts are vanilla. There is a white bark used like white chocolate but it is also vanilla.

If I'm using REAL white chocolate, I use Peters, Callebaut, or Ghirardelli--usually depends on price and access.

When I'm using imitation chocolate--candy melts--I love the Merckens's Super White.

I use Lindt white chocolate. If I were to start a bakery or restaurant, I'd most likely upgrade to Callebut.
