I made Dulce De Leche BC by adding a can of the Nestle Dulce De Leche to my regular BC recipe... it was super yummy.... everyone loved it and it crusts really nice also so it's easy to work...

I think JodieF, does this, if I am thinking of the right person. I know she makes her own caramel and will make a fudge layer using condenced milk and chocolate and she mentioned a snickers layer.

I am not at home and do not know the recipe off hand. It is a martha stewart recipe. If you go into her website and do a recipe search, you will find it. I just made it this weekend and folks loved it!

Sure. If you go to www.marthastewart.com and then go into the recipe search tab on the left of the screen, type in brown sugar buttercream, it will come up. Let me know if you find it.

Below is the recipe for Brown Sugar Buttercream.

(Makes about 4 cups)

4 large egg whites
1 cup packed light-brown sugar
1/4 teaspoon salt
1 1/2 cups (3 sticks) unsalted butter, room temperature, cut into tablespoons

Directions:
- In a heatproof bowl set over (not in) a pan of simmering water, whisk together egg whites, sugar, and salt. Cook, whisking constantly, until the sugar has dissolved and the mixture is warm to the touch.
- Transfer to the clean bowl of an electric mixer. Beat on medium speed until fluffy and cooled, about 15 minutes.
- Raise speed to high; beat until stiff peaks form. Reduce speed to medium-low; add butter, 2 to 3 tablespoons at a time, until fully incorporated.

Another idea is to use the basic butter cake recipe and melt and cool some chocolate for the cake. For the filling - soften/melt a Snicker Bar and mix it in with some additional melted chocolate (it will be chunky) and use it for the filling ... ganache will work well also. Hope this helps.

This weekend I made some french vanilla mousse mix and added some Mrs. Richardsons caramel topping to it (it was a thicker, nicer caramel than like, the Smuckers kind) and it was a very delightful caramel mousse...I would think it would taste super with some chopped snickers and maybe a thin layer of chocolate ganache sandwiching it.

I've been making the confetti cakes chocolate cake, which works really well for most applications. I've also used the chocolate fudge cake from the cake bible. I fill with home-made caramel, chopped peanuts and whipped chocolate ganache and it goes down very well. Ganache isnt as sweet as buttercream so its a good balance.
