I'm making my DH's b-day cake and need to use fondant. He thinks MMF and MFF are too sweet. I hear Rhonda's ultimate MMF is less sweet. I use IndyDebi's BC and that does help lessen the sickeningly sweet taste. Any other ideas for cake recipes or icing or fondant to lessen the sweetness??
He LOVES red velvet (I use Chef Steph's) but I always make that for him. He also likes Choc WASC but I reduce the sugar a bit and with the fondant on top it still tastes too sweet for him!
is there a particular reason, you have to use fondant, since he doesn,t like it because of it being too sweet. why not just ice it in indydebi's icing. since he must like that.seem like you are satisfied with the red velvet cake recipe. you can try rhonda,s , making the cake he likes. then rhondas mmf recipe, and see how he likes the taste. someone else might have a better idea. i haven,t made rhondas but it does get good reveiws on this site. maybe satin ice. i do LOVE pettinice taste. hth hope someone else sees this and give you their experiences.
All fondant is super sweet - why doesn't he just peel it off? I love using fondant on my cakes but I never, ever eat it . I always use a full layer of icing underneath.
I have a friend who "doesn't eat cake" and generally doesn't care for desserts, because he considers them "too sweet." I made a cake for his daughters' birthday, I used the Scott Clark Woolley Fudge Brownie Cake and then made whipped mint filling (using Rich's Bettercreme and peppermint extract) and mint IMBC. He LOVED it, said it was probably the best cake he'd ever eaten, and he ate TWO pieces. After years of teasing me about how he would at least be courteous enough to TRY a piece of my cake if he ever had any, just to be polite, because he doesn't like cake....and he scarfed up two BIG slices!
Might be worth a shot! I use dutch process cocoa for the cake. It is super chocolatey but not overly "sweet" and IMBC icing is infamous for being a "less sweet" icing.
Personally I think the Whipped Cream Buttercream from the recipes section is less "sweet" than IndyDebi's icing, if you prefer a powdered-sugar icing.
I personally find the IMBC less sweet than reg bc, or a ganache with very dark choc, the stuff that isn't that sweet to begin with, or a creamcheese bc with not too much icing sugar?
