Question On Using Fresh Fruit

I want to use fresh raspberries as part of the filling in my cake, but am concerned about the cake not being refrigerated and the berries spoiling. The entire cake will be covered in fondant, and will likely be unrefrigerated for 1-2 days before being eaten.

Do you think this will be a problem? Will the berries spoil in that time?

I don't think I would leave it out that long and I know this is a hot topic, but I refrigerate all my fondant covered cakes and it doesn't give me any problems. You can look in my pics to see my cakes.

Berries are tricky - once you wash them they want to mold, especially at room temp. I'd refrigerate.

That being said: raspberries and cake...yummy!

I would refrigerate them. I don't like to take any chances.
