Please could anybody tell me what copha is, there is a recipe for sugar paste that I would like to make, but I have never heard off this.
Perhaps they don't sell it in the uk or it has a different name.
I would be grateful for any replies.
Thanks
Hello cardicard, we have Copha here in Australia. Its white vegetable shortening stored in the fridge, and has hardened coconut oil and soya bean lecithin as the ingredients. I assume it is similar to what is called Crisco on here.
The main difference b/n Copha and Crisco is that Copha is really hard. Its very hard even when you leave it out of the fridge. We use it here to make chocolate crackles (do you guys make those?) - these are cupcake papers filled with a mixture of rice bubbles (crispies), coconut, cocoa, icing sugar and copha. The copha makes it set at room temp.
