I think the key was I found almond flour at whole foods and it was already ground fine, I just had to sift once.

I also used superfind granulated sugar. don't know if the made a difference but couldn't help.

I just bought a book at Borders that is about nothing but making these cookies - and the buttercream for inside too! I am busy making decorated cookies for my son's wedding this weekend. But after that I intend on tackling these babies. I just love the look of them. And all the different colors! Heaven.

these are pronounced like macaroons but are french ant totally different (no coconut)

Very light, very tasty and you can be so creative.

I make thousands of these every year for cafes in my town. They are truly an artform! I fill mine with differetn types of ganache icon_smile.gif

Like you I was so intimidated, and my first attempt was a total disaster but I hate to fail and they are soooo expensive at my local bakery so I just had to try again.


Have fun and be sure to let us know how they come out and what flavor combo you make.

Would love to see a support group for these- I have attempted twice and although they tasted okay, they weren't pretty! I have an upcoming wedding and would love to make these for it.
