The debate rages on. icon_biggrin.gif

I've heard so much talk and read so many postings about royal icing and glace that I was curious which was more popular for the base coat for cookie decorating.

Also, why do you prefer royal/glace? I'd like to know the pluses and minuses of both. Best recipes, best techniques?

I like the glace for the taste and the ease of storing. RI separates when being stored for more that a day or so and then doesn't work as well as when used fresh. Glace stays at the same consistency when stored and tastes great as well. The only negative to glace is that it takes longer for it to dry and if left to dry in a cool place, it will have spotches on it.

I use RI exclusively (a very slightly modified version of Antonia74's recipe). I want to try glace, because I think the cookies that people post on here that are made with glace look wonderful... but I've had such success and ease of use with Antonia74's RI, I just haven't even tried it yet.

Here are some threads on the difference between the two....

Glaze for me. So simple to make and use, I also like the shine it has when dry.
