Step1:Assembly
I made 3 9x13 cakes and 1 8x8, I leveled the cakes (saving the scrapes for use later)and stacked the 9x13's with crusting buttercream, I layered the 8x8 I placed the bottom layer on the top left of the 9x 13 stack, and cut the top in half and put that half in front of the other layer(to give it a slight slope downward)I topped that with another layer of butter cream.Wrap tightly with plastic wrap and place in the freezer until firm.

Step 2: Carving
Once frozen I placed a "sole" template on the top of the cake. I made the template by drawing on a 10x14 cake board and cutting it out.I cut a rough shape around the template with a very sharp pointed knife (I did not use a serrated knife).Once I had the basic Sole shape I carved it down very carefully to match the shoes shape I was copying. One of the things That I think helped give it a realistic look was adding scrapes of cake where parts of the sneaker were more "puffy" or raised. If you look at the finished carved cake, I added scrapes to the tongue, the back of the heel, and the "collar" of the shoe.I attached the scrapes cake with buttercream. Making these parts out of cake and COVERING them in fondant, gave them a more 3D shape then just forming them out of fondant would. This really is the KEY to the realism. To set it I crumb-coated it and refrigerated it OVERNIGHT.

Step 3 Covering in fondant:

I am sorry I do not have any pictures but I was very involved in making this and forgot. I rolled out a thin layer of MMF and placed it over the chilled cake. I was careful to rub around and accentuate my 3D areas.I cut a hole over the sneakers opening and pressed the fondant around the inside. I added a black fondant circle inside. Then I started to work from the bottom up.
The Shoe had three different parts to the sole grey, white and blue layers I started with the grey and worked up. As for the decorations, they vary by shoe. The key is to really look at your picture or model to determine which layer of decoration needs to come first. Now this may sound obvious but it may not be, these types of sneakers are very ornate and have many layers. BE SURE TO START WITH THE RIGHT ONE. I did not make any templates for the decorations on the shoe, I made the color fondant I needed and just held it up to my shoe and cut the shapes out directly on the shoe with a very sharp Exacto knife ( be careful not to go through the base layer of fondant). Some people like templates I found free-handing against the shoe really worked well for me and also helped with scale.

Step 4: Finishing touches:

I really tried to stay true to the design of this shoe and include ALL of the details to again make it as "real" as possible.I made the "stitching" marks using my Wilton #10 Serrated Quilting Wheel.For the shoe laces I rolled out some fondant 1/4 thick measured out strips with a ruler and I pinched the ends a bit and attached them to the holes using sugar glue (gum-paste melted in warm water). To draw the pattern on the grey parts of the sneaker I added some black gel food coloring to some clear vanilla and painted it on. The key to success with these cakes are PATIENCE and attention to detail. This cake took me 9 hours (including carving) but was well worth it. I hope this was detailed enough. Thanks for the tutorial. Just want to make sure I got this right. You put the sole template on top of the cake and cut around for the shape. Then you started to carve the cake to get the basic look?

Yes that is exactly what I did. It gives the whole cake a quick basic shape and makes it much easier to carve downicon_smile.gif

Thanks! I'm following your tutorial as we speak. I have the cake chilling in the freezer right now....I'm so nervous about the carving.

That was strictly trial & error. I basically just eyeballed the logo and did the best i could. However I did use flower paste for the red one which has more elasticity I think that may have helped. The blue was fondant and took a bit longer.

No I did not use dowels in this cake I did not think it was necessary, it held up beautifully with out extra supports. Of course if you are more comfortable using dowels it can't do any harmicon_smile.gif
