1) That no matter how clean I try to keep my kitchen while I'm doing a cake, it ends up a huge mess that I have to clean up.
2) That cake decorating is the only hobby I've ever found where 7 hours can fly by and it feels like nothing.
3) That I look forward to listening to my "cake music" playlist while decorating.
4) That when I'm not doing a cake, I'm constantly thinking about my next one.
5) Practice definitely makes perfect and the more cakes I do, the less time it takes me.
6) Ditto on not doing everything the same day ... I did that last week and it sucked!

I learned it is a good idea to write out a list of EVERYTHING you'll need to do to accomplish a cake...

Then put them in order of what needs to be done first, second, third, etc.

Then write a fair estimate of how much time each step will take (even if you plan to do two things simultaneously, write down the time each thing will take individually).

Then add up all the time it should take to make your masterpiece.

Then double it, and maybe you'll come close to estimating the correct time! (Not kidding.)

I've learned to:
1. make a checklist of what needs to be done, and check it off.
2. Don't put things off until the last minute, because that last minute will end up filled up with something else.
3. Make double batches of icing....you'll need it.
4. Simple and clean is the way to go. (I'm still working on that one.)
5. You can keep your husband happy with cake "scraps" and ice cream.
6. No matter what you think it looks like, others are usually pleased, and it all tastes good.
Monday, Tuesday, Wednesday, Thursday, Friday, Saturday, Sunday.
See. There is no "Someday"!

That I am the most talented, wonderful, amazing, cool aunt on the planet. icon_biggrin.gif (Most of my cakes are for my nephews and they are the ONLY ones I do any kind of carved/shaped cakes for.)

"Simple", clean cakes are the most difficult to create!
Do everything possible ahead of time.
Freezing cakes makes them taste better.
No one knows how much time you spent on the cake (exc your family).
Having the right tools makes things so much easier!
People will be impressed with your worst creation.

I have learned that I STILL learn something new every week on CC. icon_biggrin.gif

I have learned that brides who spend 2000 on a dress, 4000 on catering, 1000 on flowers.. think they only have to spend 80-150 on their cake.. icon_lol.gif

that when i mention cake central.. hubby groans and says..not another cake story..

I have learned so much from here that there is not enough space to write it all. THANKS TO ALL OF YOU.

I've learned that I can't do everything perfect all the time...and most of the time there's alot of room for improvement.

The good side to that is that I've learned that most customers don't see the need half as much as I do. thumbs_up.gif

I've learned how to charge enough so that I make a good profit. Also that I don't like "buttercream" with no butter in it.

Well, technically, buttercream that doesn't contain butter shouldn't be called buttercream then. Perhaps margarinecream, or criscocream, but definately not buttercream.

I've learned how to be patient with Cake Muggles, and newbies fresh from Wilton 1 with grand bakery dreams. Not everyone 'gets' it, but that's okay.

Delegating. I like to do everything myself but I've learned that my employees are there for a reason.

Have to add that I learned from my teenage girls that luster dust makes awesome eyeshadow.

Ha ha, I've heard Criscocream (or maybe Crisco Creme) before but I always forget about it. Huh huh huh...Nothing perishable there.
