I am wanting to make this ahead of time and I am needing different colors. I can make it ahead of time and then color it as I need it right? How hard is it to get the color even doing it this way? Thanks for any advice!!

It's not hard, it's just a lot of kneading and working the fondant. I cheat by giving it a few seconds in the microwave to help make it easier to handle.
