Question About Coloring Sugarshack Buttercream

I posted a few questions about sharon's dvd last week. Well I tried her buttercream recipe and I LOVE it! Not only does it taste good but I love how smooth it came out. So awesome! My question is, what is the best way to color it without whipping a bunch of air into it? When I made it the other day, I only needed enough to ice an 8 inch round so I didn't want to color all of it. I took out what I needed and colored it purple but when I was done stirring it (by hand) it was not as smooth as it was originally. How does everyone else do it?

I just came on here to post the same question I am making my daughters birthday cake for tomorrow and I only needed some for an 8 inch and when I colored it I got a buch of air into it too. It still seemed to frost better than my other recipe, but I still thought that it had quite a bit of air in it. I would love to know how to add color in it too. What flavoring and creamer did you use? I used pure vanilla flavoring and french vanilla coffee creamer and it made a really good french vanilla buttercream.

Exactly! I thought it did much better than my usual recipe but still had too much air after I added color. I would rather not add color during the shortening, flavoring, creamer stage because I don't always need a whole batch to be a certain color and would like to keep the rest white to use for something else.
I also used pure vanilla flavoring but I used hot heavy cream rather than the coffee creamer. I am a firm believer now in filling the mixer all the way to create a vacuum. Made for some seriously smooth, creamy icing! I did make a god-awful mess though.

I used this recipe this weekend and coloured it in 3 batches, different colours. I just stirred in gel colour with a soft spatula, one of the rubber ones. The excess air can occur if you don't create that vacuum when mixing. I only had a little air but the rubber spatula helped work them out. HTH.

hey folks!

If I am doing a small batch, I do it by hand and try not to whip air into it while mixing by hand, but I often do. BUT, for some reason, with this recipe, when I have colored icing with some air in it, it still seems to smooth out perfectly with the viva and other paper. don;t know whay, but it does.

you can also try to create the same vacuum in a smaller bowl and hand mixer with the colored icing, but it needs to be a powerful hand mixer or it will die. icon_sad.gif

dont mean to hijack this post, but just wanted to say you did a great job on ultimate cake off! your cake was stunning and i cant believe all the obsticles you had to face. i would have went off-mad crazy.
hope to see more of you on tv. you are a true cake artist and such an inspiration to many.
ive used your buttercream many times with great results.
i usually color after mixed with no problems.

Thanks Sharon for offering your insight! I agree entirely that even though I seemed to whip air into the icing when coloring it, it smoothed rather well with a viva! I just wanted to ask about it to make sure I wasn't missing something but it sounds like I did it the way you do. I am really glad I ordered your dvd and look forward to ordering others in the future.
