See the "History of cake pans sizes" in this thread: http://cakecentral.com/cake-decorating-ftopict-628706-.html

Remember that the terms "half" and "full" started in a comm'l bakery. A full sheet is 18x24 and serves 100+. The above link explains it all.

P.S. Take note that the grocery stores are starting to put out 11x15's and are calling it a "half" sheet. Since these are smaller cakes, they are, of course, cheaper than a "real" half-sheet. So when you client tries to compare your half-sheet price to the grocery's "half" sheet price, be educated and be aware that you can inform them the grocery is ripping them off because that is NOT a half sheet.

This is probably the same as why bags of frozen veg are now 12oz instead of 16oz or a loaf of bread is now 20oz instead of 24oz. They're cutting down the size but not the price.

Interesting! I have wondered this too, because I recently went to Omaha Bakery Supply and discovered that there are many different sheet sizes!! Thanks for the other posts! That was alot of good info!
