Can I freeze gum paste and fondant? I dont like using gum paste because it is difficult to store any leftovers. Even when I wrap it, it dries out so fast and I hate to waste it.

Whenever I am off on vacation (next week, yippee!) I play cake. At the end of the week I usually have left over gum paste or colored fondant. I wrap it, and wrap it, and wrap it, etc. But it always dries out and Im not able to use it again. Is there a better way to store it, or is there a way to bring it back to life? I have some Tiffany Blue fondant in my pantry from LAST October, triple wrapped in plastic wrap. It feels hard. Do you think there is a way to salvage it? Would it be too old to use?

I found that wrapping in layers of Glad Wrap (i think you might call it Saran Wrap icon_confused.gif about spelling) - and then placing in a freezer bag didn't keep my gumpaste/regalice/fondant as plyable as i had hoped - so some time ago i started freezing everything in freezer bags - then a zip lock bag.
Making sure you expel all the air from the bags.

Even after 5 Months - it was still easy enough to kneed back to the consistancey when first bought.

When you take your fondant/gumpaste from the freezer allow enough time for it to completley thaw - then with some firm kneeding it will be right to use.

Some forms of clear cling wrap break down in the freezer - and it becomes brittle - thats when the fondant/gumpaste/medium starts to break down also - and just too crystalised to kneed back to how you want.

You can also keep it all in the fridge - again in frezer bags - if you have the room. It can be stored that way for many months.

i wrap different little logs of the paste.little shortening on my hands.. i wrap them in saran wrap really good. place in a large freezer bag. put in frig. or freezer. mine keeps forever. i take out . let thaw room temp. rework it with little shortening on my hands. if i am in a hurry. i nuke it micro on very low heat. very low . that works great for me too. again, kneading and working in a little shortening to make it pliable.hth

I store my leftover gumpaste and fondant in the fridge, wrapped in plastic wrap and then inside a freezer ziplock bag. I never have problems with drying out. I think the freezer bags hold in moisture better than just plastic wrap.

Oh great! Thanks! Definitely gonna get some freezer bags. And I will see if I can revive the fondant I have in the pantry. It is a decent size block, so maybe if the outside is dry I can just cut if off.
