Hi everyone, was wondering what to do?? Had this lady called at the last minute and said that she was changing the date of the party to the following Saturday instead of this Saturday due to everyone sick with stomach flu. I had done this big alice in wonderland mad hatter cake and I'm like I am not making it again!!@## So I was wondering if I wrap it up good and put it in the fridge will it last till next Saturday and still be fresh? Or do I need to do it all over again for next week? Thanks for any help!

I have never refrigerated a fondant covered cake. Some say that you can, others say you can't. Curious to see what the answers to this question are going to be.

I've also never refridgerated fondant (and don't know the answer)...gosh that would suck if you had to do it again

I have refridgerated a fondant cake many times. But....for only one day. I did a cake for my daughters preschool fundraiser and had to refridgerate it due to the event being on a Tuesday. I was told later that someone bought it for a birthday party that Saturday. So from Sunday afternoon till the next Saturday it was in a fridge. I saw the Dad who had bought it later and he went on and on about how wonderful it tasted and looked. So.....either he doesn't know what a nice cake looks like or it really worked???!!

I refrigerate fondant cakes all of the time. I actually did a cake for my husband's birthday. He had to leave for a business trip, the day after I gave him the cake. He got home 5 days later and finished off the cake on the 8th day. It was still incredibly moist, down to the last piece of cake (I tried it for myself). This doesn't happen with all cakes, but from my experience, the frig works pretty well. Saying all that, I don't know if I'd want to guarantee freshness after a week, for a customer though. Just my opinion. Good luck!

thanks everyone! I told her that I couldn't guarantee that the cake would be fresh after a week old that I would probably have to redo the cake, (I don't want to look bad! )
but she said she still wanted the cake to not redo one, basically it was going to be mostly for looks and that they would have other treats at the party as well since everyone knew that the party had to be postpone. I'm like lady if I knew that I would have done it all in Styrofoam!
