COOKIES BY DESIGN Tips & Tricks II - Page 3

Okay people I got permission to post my favorite recipe for sugar cookies and the glaze I use. I got these from 2 different ladys and I love them together.

Best Sugar Cookies

2 c. sugar
2 c. butter
3 eggs
1 tsp. lemon extract

Cream above together, then add:
1 tsp. salt
6 c. flour add only enough of the flour to the creamed mixture to handle the dough (I use between 5 and 5-1/2 cups) without being tough.

Chill dough about an hour. Roll cookies out on floured board and cut with cookie cutters. Bake app. 8-10 minutes. Decorate with royal icing or buttercream or cookie Glaze below...
**************************************
cookie glaze

3 cups confectionary sugar
1 table spoon light corn syrup
1/4 cup hot water
1-2 teaspoons flavoring

I use vanilla in my cookies and either real or imitation almond for the frosting flavoring
I use it like color flow, I make a stiff frosting for the outlines, let dry, and then thin it down with water to fill in, you must let each color dry before adding another or it will run, to make your frosting stiff i just add more confectionary sugar,, I either paint it on, or use a no tip bag, but to do the outline I use a 4 or 5 tip, But make sure you let the outlines dry, the cookies will dry to a hard outside crust and shinny, but will stay soft inside, yes you can stack them after they are completely dry. You can also use food color pens on the white icing once dry. P.S takes longer for these to dry than royal icing, but sure makes the taste well worth the wait. Jane
