I had some frozen buttercream which I thawed 2 days ago in the refrigerator and used some of it yesterday and have over 2 cups left of it so Can I refreeze buttercream(made with just butter and pwd sugar) which was frozen and thawed once?

I have only re-froze when I did my FBCT and didn't have any problems.

it'll be fine, when I make up colored icing I remove the tip and put a piece of plastic over the opening on the piping bag and replace the coupler ring over the plastic and pop them in the freezer (especially when I make black or red, or dk. blue or something..........no sense in tossing it)......when I need that particular color, I pull it out in the morning of my decorating the cake I need it for and then pop it back in the freezer once I'm done with it. I've frozen, thawed, refrozen up to 10 times sometimes without any difference in texture or taste of icing! Just make sure you seal it up good so it doesn't pick up any flavors from your freezer!

re-freeze always. My friends come over and open up the freezer and look for icing, they always know it's in there!!

I'm glad to see that what I've been doing is done by so many. I often re-freeze. icon_biggrin.gif
