One of my best clients who also happens to be a good friend of mine is throwing her sister a birthday party and she has ordered the birthday cake from me. She tends to be really particular to say the least, today she told me that the last 2 event cakes that I made for her were a little dry and asked if I could either make them moister or find a different recipe. She is really a great client with absolutely wonderful connections and referrals that have really kept me working with high end clients who don't mind paying for the true value of the services/product. Can any of you marvelous cake enthusiast give me a yellow cake recipe that has great flavor and is really moist? I know there are a ton of recipes in the recipe section but I'd really rather here from those who have full proof recipes as the party is this weekend and I don't have a lot of time. Please and thank you!

Well, this one is no great secret by any means...but I always get rave reviews on my cake taste...my only trick is adding a small box of instant vanilla pudding to a box yellow cake mix! Very moist every time.

Try this one. David's Yellow cake. It is absolutely delish and moist. If you need to, freeze finished cakes overnight and let them thaw just before decorating.

Hope this helps

I just add 1 or 2 tablespoons of water to my recipe and it works everytime. I use a very basic scratch recipe so I don't' know if it will work with a box mix or complicated scratch recipe but I don't see why not. It's got to be worth a try to save experimenting with new recipes.

I personally would've been extremely insulted with her comment about trying another recipe...really??? Do other people complain about your yellow cake? do you like it?

I've had no other complaints about my yellow cake and I personally love it! More often than not I have been using a doctored box mix and I get rave reviews.

Then why change it? If she doesn't like it, maybe you can offer her another flavor of cake? I mean, you really can't get much more moist than a doctored mix.

The Vanilla Butter Cake from the Mermaid Bakery is a delicious and moist. I also like Toba Garrett's yellow cake.

A few thoughts:

1) You could moisten up your own cake by brushing it with simple syrup

2) Do you torte your layers? I personally think 4 thin layers with 2 layers of filling and one of buttercream at least seems more moist than 2 thick layers of the same cake with just one layer of filling.

3) You could try baking it for just a little bit less time. Once the cooking is complete, any extra baking time just dries it out. The lady who makes the best brownies I've ever had describes them as being "perfectly under-done".
