I need help, my daughter is getting married in the middle of June , her reception is going to be at night but the temperature will be still probably in the high 90. She really wants a cupcake wedding cake and I will try to make that but I need a recipe for a frosting that would not melt in the heat ...any good recipes? Does anyone have suggestions how to keep the cupcakes cool? I cant put them in a cooler ..they have to be on display =)...what about dryice underneat?
thank you....i am learning so much from ths site =)

Hi,
I'm in AZ too and I know it will easily be in the 90's at night if not hotter at that time of year.

I don't know of any recipe that will hold up to that heat. But I'd suggest making the buttercream with Crisco and keeping the cupcakes super cold if not partly frozen up until it's time to display them. Then serve shortly after they're on display.

Sorry, it's not much help.
