I have come accross these flavors mentioned in various posts and I'm curious about what they taste like, how are they best utilized, do you have a favorite and why? Also, does anyone have a specific manufacturer they prefer over another? Any info would be great as I'd like to buy these on line. Since I would only using these flavorings for my own jollies, I don't make and sell cakes or cookies, I don't need the gallon jugs of this stuff, but I am intrigued by the fact that emulsions are touted as highly concentrated and maybe it's better to use them instead of half a bottle of almond/vanilla/buter extract every time I make cake or frosting.

They are wonderful because they seem to have just the perfect combination of flavorings. Creme Bouquet has vanilla, almond, butter and a touch of lemon. You can use them in the icing and in the cake. And yes, they are strong.

You should just order a small bottle and try it. I'll bet you will be hooked.
I don 't think the brand matters very much, although the different brands do have different flavors.

Thank you so much KathysCC, your opinion helps me. I figured I'd get a bottle of each of those three flavors and experiment...and I was hoping experienced bakers like you would give me their thoughts. Thanks again!!

I am totally addicted to creme bouquet. icon_biggrin.gifthumbs_up.gif

I haven't tried ALL the brands which offer CB, but some members preferred Magic Line over CK:

Thanks for the break down of the Creme bouquet flavor. I looked into the other threads, but didn't see any thing like that for the princess emulsion. Is that similar to the creme bouquet? I can get princess locally but not creme bouquet, that is why I ask. If they are similar I'll just get it locally.

Here's a link to King Arthur Flour's Princess emulsion product info:

http://www.kingarthurflour.com/shop/items/princess-cake-flavor-4-oz

The Princess emulsion has a lot of positive reviews, but it has a nut flavor component which Creme Bouquet does not. I don't think I'd like it as well as CB, which I use as a flavor enhancer to other extracts.

I'm loving Princess, but I dont' taste any nut component to it at all. It starts as vanilla and has a citrus finish.

Once again, I am so glad that there are so many people willing to share their information! I have ordered the Princess and Creme Bouquet flavorings as well as some Butavan just for kicks. I am super curious to see if I can tell the slight differences between the first two. I had not heard of Wedding bouquet until this subject came up so I will see if I can find some of that too...just to confuse myself even more. Ha!
Thank you for including how these emulsions are to be used, I would have thought to use them as a replacement to the extracts but I see that they are to be used as an enhancement or addition. Great tip! Ok, so I ASSUME that I will use these in my good ol WASC cake/icing only... but can these flavors be used in a chocolate cake? I suppose they would be good in a lemon cake also.
Thank you again for all of the helpful insight, it's really nice for someone like me who enjoys this sort of detail.

I've heard that some people like them in chocolate cake but I personally don't think they go together. I think it might be the lemon component in some of the emulsions that doesn't match the chocolate to my taste.

You'll have fun trying the different flavors. Like me, you might find that there are only slight differences to them. Have fun!

Is it safe for people with a nut allergy to eat princess emulsion? I know it has a nut flavor but didn't know if it still effect people the same way nuts do.

I adore the Princess ... Add it to almost all of my flavors, in small doses, just to enhance elements that are already there. The CB is too heavy on the citrus for my taste with nothing to soften the aftertaste ... leaves an almost soapy taste for me. That being said, my family enjoyed it when I used it, and I know tons of people swear by it, so you just need to find what works best for you. A small bottle of each is an affordable way to start (despite being a hobbyist, I now order by Princess emulsion by the dozen since I get a better deal on it and I go through the stuff!).
