Best cake recipe for Sculpting?

I need to make a husky dog sitting up. I've never done a 3D sculpted cake before, and especially one of this size. As an experiment I tried freezing a small cake, defrosting it and then carving it. It was a crumbling disaster and now I'm a bit in panic mode.

Are 3D sculpted cakes that hard to do? I already have the dog built in rice crispies which I planed to use as a guide and template. Is it the cake recipe that was the problem or is it just that difficult to sculpt cake? Any cake recipe, sculpting tutorials or advice would be welcomed. I fear cake sculpting may just be out of my league.

Carve it while the cake is frozen. I usually leave it in the freezer for 3 days before carving it.

Thats funny because I also need to make a husky 3D cake and I am an amateur cake builder. Let me know how you did and if you have any tips

I did the WASC cake for my Topsy Turvy, Strawberry & Chocolate version. It was great. I'm actually starting to branch out and do scratch baking, I'm wondering which recipe would be best from scratch!! I just posted a similar question.
