I've heard of these and seen them around. I know they're mainly for flavouring candy and chocolate, but I was wondering if you could flavour icing with them? And if so, does it change the colour of the icing a lot?
You can flavor icing with them. The colored ones will change the color of the icing a lot, but if you're buying the tiny bottles, you can tell which ones are colored and which are not.

I use them for my icings all the time. I use the pineapple and orange flavors the most. And they have so many flavors to choose from.
I used a teaspoon of emulsion because it called for a tsp of vanilla. I wasn't sure myself, so I replaced the vanilla ext. with the emulsion. It tasted good to me. Do you all still use the vanilla and add the oil/emulsion with it?
i just picked up a bottle of the princess cake/cookie emulsion. ive been using it all week-end. it is very thick - i was shocked when i first poured it. i think its stronger than what im used to using..regular vanilla.
so go light at first then adjust as needed. it did tint my icing alittle not too much - when i needed white i just added white color to my buttercream.

I only use 1/4 teaspoon, or maybe 1/2 if I want it a little more flavorful. I use these in my cakes too!! Yummy.
