How soon before the cake is picked up can you cover a cake in fondant? It seems as though on the cake shows they do it a day or 2. I have 3 tier cake orders next weekend which is the most of those kinds of cake Ive had at one time. I would like to start ahead of time if I can.

I know this is a little late but if the cake needs to be delievered on Saturday you can bake on Tuesday and/or Wednesday, apply BC to layers on Thursday, put on fondant and finish on Friday.

Ya, I follow almost the same timeline deah stated. I'll bake on Wednesday, freeze overnight, carve, fill and coat, and cover in fondant Thursday, and then finish any detailing on Friday. You could probably fondant a couple of days earlier than that, but depending on the fondant you use and how you store the cake, the fondant could get pretty firm.
