I've been having problems with my fondant settling lately. I put it on the cake and it looks fine and then the next day it doesn't look as smooth. I wish I had a picture to share, but I don't. Am I rolling it too thin? It's almost like it gets air underneath it. Thanks!

there are a couple of things that could be doing on. One is putting fondant on a cake while it's still too cold. I freeze my cakes so once I take them out of the freezer, fill and crumb coat, I let them sit for at least two hours before covering with fondant. This helps in two ways...one it allows the cake come to room temp, helping with the gas bubble problem, and two, it allows the cake to settle. Any filling that splooshes out can be cleaned up and then I can put the fondant on an already settled cake. Your cakes may not have settled by the time you put on the fondant and then when they do the fondant settles too. The other issue you may have is a too thick crumb coat which can "melt" as the cake sits out stretching the fondant with it. But if I had to bet I'd say it's the settling issue. Some here actually weight down the cake after filling and allow it to settle for a few hours or even overnight before putting the fondant on. Hope this helps!
