Hello everyone,
I was wondering how long it's ok to freeze a cake?

Also, after i take the cake out of the freezer should i wait till it is completely thawed before icing it? If i were to crumb coat the cake, would it be best to crumb coat the cake prior to freezing it? or is it not necessary to crumb coat if i freeze it? i am new at cake decorating so any and all helpful hints are greatly appreciated!

Hi Megan, welcome to CC. You can freeze cake alone for 3 months. I sometimes freeze cakes with the filling and sometimes just the cake. I have read in many other threads that some fill, crumbcoat and freeze. It has to be what works for you best. icon_smile.gif

I take the cake out two days ahead. Example- for saturday, take the cake out on thursday night and put it in the fridge and then next day morning, take it out from the fridge and leave it in the counter with the wrapping. Let it come to room temperature. When you are ready to crumbcoat, take the wrappings off. Then proceed as you normaly would. icon_smile.gif

I had a cake I'd forgotten about in our deep freezer for over a year. It tasted fine. That being said, I wouldn't sell a cake to a customer that had been frozen that long! icon_biggrin.gif

My chocolate cake will freeze 10 months with no alteration in taste. (Tried it as an experiment.)

I was wondering about this too. I have a strawberry cake thats been in the freezer since October. I think I will take it out this weekend and try it out on the family for Valentines' day! icon_wink.gif
