Did anyone see Cake Boss last night? It was the episode where he made the cake with the aquarium. Did he say that he was pouring isomalt sugar over ice?

It was cool. I have seen a couple of people on challenges use RI? to make some really authentic looking coral - I can't remember the exact technique, though I'm sure if I look around this site I could find it - it was so awesome!

I think the RI method involves putting the RI in the microwave. I missed the cake boss episode making it from isomalt - I'll have to watch for it in reruns.

I made coral with Ice and chocolate, it works great!

Buddy just poured isomalt over ice in a bucket. I'm not sure how long he let it set, but he took it out and loosened the ice around it, though some of it I'm sure he had to let melt, and it came out in a really neat coral shape.

MissRobin - I bet that was great! Did you use white chocolate? That would make great coral! And you could dust it to make it more authentic too! I may have to use that idea icon_smile.gif

I did use the white candy melts and dusted with pearl dust, for the particular cake I was making. It works really well, once you pipe the chocolate on the crushed ice, it firms up really quick and you just pick it right up off the ice!!
