Can anyone tell me how to get my cupcakes to rise perfectly over the paper. Either they are flat or way to puffed up.

Are you using the same recipe every time? If they are baking flat I would think there either isn't enough batter in the cups or there isn't enough baking powder in the recipe. If they are too big, then the opposite. Also, are you measuring out how much you put into each cup?

Yes, I use the same chocolate or vanilla recipe but I do not measure out the batter. Do you recommend a specific amount I should be using? I once saw something about turning the oven up to a higher temperature and turning it back down after you put them in. Anyone know if that works?
