I have a request for a custom decorated cake, covered in fondant, but they want the cake to be Italian cream. Doesn't that have coconut in the frosting? If so, then the frosting can't be 100% smooth, right? Won't the "lumps" of coconut show thru the fondant after covering? Has anyone done this? Thanks in advance!

My recipe has coconut in the cake, not the frosting. It also calls for pecans in the frosting but rather than covering the cake in nuts, I just put it in the filling and frost it with cream cheese icing.
