Are you trying to bake a cake for a diabetic? Really, there is no cake that is good for a diabetic. It's not just the sugar, it's the carbohydrates from the flour too. Basically, diabetics aren't supposed to eat anything that's white, with the exception of cauliflower. Sweetened coconut would be a huge no. Most sugar free desserts in the stores out there contain huge amounts of fat.
My mom has diabetes. She (and I think most diabetics) will tell you she'd much rather have a very small serving of a regular dessert every so often than any sugar free dessert. Now, I can make her a really decent sugar free cheesecake, but any other desserts are very hard to make taste good or have any kind of normal texture.
