Hi, its me Christy... Tons of ?????
How long can you keep a cake frozen??? I MIGHT have 14 mini doll cakes and one big doll cake to do for Nov. 15th.. How much time in advance should I bake these and freeze? How much would one charge for this kind of order?:
14 mini dolls with fondant dresses (buttercream underneath)
all different pastel colors..
And one big doll all white
(sigh) Not sure if I want to take this on.. I need some therapy!!!! icon_cry.gif
The reason I am not sure about taking this on, it's for my little sisters Quincenera.. And well my Step-mother was looking at one of my wilton books (2005) and she spotted the mini dolls in there.. Now she says " oh my make me 14 little ones and one big one".. icon_surprised.gif With no "can you?" , "how much?" no " it wont be to much will it?", NOT EVEN A "Please"..And I keep thinking this is my little sister..

Good luck! I think that you can bake and freeze for up to a month. I am not sure. I have kept cakes frozen for three weeks (cancelled order). They were fine. I am not sure about anything longer than that.

ok i think you should do it. I would love to do a Quincenera but my SIL didnt have one. Long story. Any ways it seems your step mom is caught up in the excitement of planning the party. SOOOOOO i say you figure out home much it will cost you to make it and them make sure you give yourself at least 50 profit. So if it cost 50 to make i would say charge no less than 100. it will take alot of time. I am pretty sure i read you can freeze a cake for over a month. as long as they are covered well. I have never personally done it though. Hopefully some one else will come along with more experience.

Go ahead. Sounds like a challenge but it is for your sister. I am sure you don't want to be asking me. I just do cakes for fun.

Up to 1 month is a good time before there is deterioration.

I don't know much about the celebration, but I do know they can be just about equivalent to a wedding. Just think, You may have a new specialty business come from it. (I don't know if you already are in business) Posts pics!!

Yes they are very much like weddings.. In the means of all the preparations.. Hall, dance, caterer, music, dress, tuxedos, lots of people and of course cake!. fear is starting to take over the "step mother situation". Now It's starting to hit me that ALOT of people will attend and that they will all see my cakes..And I don't run any kind of business..Just a stay at home mommy with lots of sugar, cake mixes and a big bad KA! icon_biggrin.gif
