Can you freeze a dirty iced cake and for how long. Would like tobeable to have a few cakes made up if I need one quick.
Yes you can, I think the lshelf life is about three months in the freezer.
What I do is I dirty ice my cake place it in the freezer for about 20 minutes to firm up then wrap in plastic wrap three or four times in different directions making sure it's tight but not smushed. When ready to use bring it out to room temp to thaw. Place another coat of icing and decorate. Should be fine.
I also think cakes taste good after freezing, I do not "dirty ice" them, does this help any way besides get you a step closer to finishing them? I double wrap them (they usually are made for an order in the next week or so), and if they won't be in the freezer for long, I wrap them in a couple of plastic grocery bags for additional protection.
Can you freeze a completed cake with fondant/gumpaste accents, will they wilt upon coming to room temperature. If these accents have been hand painted (using vodka as the liquid) will the paint/shimmer/glitter run??
