I made my first chocolate cake - I have layered it with chocolate ganache (again another first) and covered it with ganache. I chilled it as usual and then covered it in white fondant. Normally I would leave the fondant to set overnight before I start decorating it but unfortunately I am up againt a tight deadline so I started covering it in green fondant stems - I used a little water to stick the green fondant to the cake. When I woke up this morning I found that a syrup like liquid had leaked out of the bottom of the cake. The cake itself is fine and it hasn't affected the fondant in anyway but I would like to ask the cc community if you have any ideas what could've happened - perhaps I used to much water to stick the green fondant? I look forward to hearing your thoughts.
Before you applied the fondant to the ganache did you brush it with simple syrup to adhere the fondant?
I would guess its the ganach filling thats leaking. When I use a ganach filling I make a chocolate icing ring/dam and then fill it with ganach.
I'd bet it was that your chocolate cake was so moist. What recipe did you use? I made a 3D turtle once using DH devil's food undoctored, and it did exactly the same thing.
Mine was covered in bc and filled with bc.
