Petits Four? How Much To Charge And Figure Servings?

I haven't done petits four for a customer yet and was wondering how many to figure for each guest and how much to charge compared to a normal slice price just for figuring purposes?

It has a lot to do with your area. One bakery in my city charged $8.50 per dozen, and a bakery an hour away charges $2.00 each.

You're probably going to hear this answer a lot, but you need to figure your cost and your time. How much will it cost you to make these? How long will it take, and what do you want/need to make an hour?

Also, depending on the event these are for (shower, wedding, etc) you can figure anywhere from 2-4 per person, if they're all one flavor. More flavors = more servings per person, because people will want to try different flavors.

You'll also find out that PF are a PITA! They will be more time consuming & if a customer is wanting cheaper they need to go w/ a cake. I would easily charge $2 for 1 PF. You'll need to make it worth your while!

I think it might depend on how you're making them. If you're going to cover them with poured icing, maybe they're faster. When I've done them, I used rolled fondant and it took forever. People will eat more of them than they would a regular cake too...if you do different colors they'll want one of each so they can see what the different flavors taste like (even if they all taste the same).

I would try to talk the customer into cupcakes instead...so much easier for you and there are so many ways to make them cute!

Well, assuming I ever master this royal PITA, then I'd absolutely charge somewhere around $2 each.
