In the past, I have just rolled out brown fondant into sausage shapes as the branches. I use melted chocolate to attach or if they are light enough, just some water or gum glue. I guess royal would work, too
You can use modeling chocolate to make the branches and attach with melted chocolate. It dries faster than royal in my opinion.
I think for this cake it is easier to just make bare branches out of floral wire wrapped with brown floristry tape, attach to cake with chocolate and then attach the individual flowers with choc or thick royal as well. The branch is easier to bend to fit the shape of the cake, without risking to break the flowers. On my cake i used thick royal to pipe the branches and also to attach the flowers, but you wouldn't have the 3D effect of the branches sticking up and over the cake, I tried rolling modelling choc, but i thought they were too thick for my flowers
if i'm going to make this cake, i'll use floral wire then wrapped with florist tape(any color will do) and covered it with chocolate. i'll use melted chocolate as glue.
i would use chocolate modeling clay.. make the branches.. let them set up for a little while.. attach with melted chocolate..attach flowers with melted chocolate. hth.. i,d make the flowers with modeling chocolate also.. then everything will be delicious to eat.. you could mix modeling chocolate with pettinice and that would make great tasting branches and flowers also..
Modeling chocolate and fondant are a completely different look than floral wire in my opinion, although in some applications it too can be gorgeous. I made a cake with cherry blossoms and used floral wire, I dont typically have a preference on guage of floral wire. The trick is making little bases to attach the flowers to. You create a short stem with the gumpaste and form it into a cup. Seperately, you create the flowers. Paint it all seperately with petal dust. Then you roll it all together using the floral tape to cover the wires and attach the flower bases. Last, glue it all with Royal icing and let it harden. They are time consuming but very worth it.
I helped a friend make a cherry blossom cake for her daughter .... she bought the stuff ... I did the work. She ordered gumpaste flowers online. I just piped some choc BC as the branches right on the cake and pushed the gumpaste flowers into the soft BC. Worked like a charm! Easy Peasy!

The one you got there in the photo is wire. You can use a wire #22 afor the flowers and add more for the
thicker areas. Or you can cover it with strips of paper and then florist tape to make it thicker.
