I have yet another question! I am planning on carving a 3-D strawberry cake on Friday. This seems really simple, but I've run into a question. Do I fill with buttercream before I carve or carve and then separate the layers and then fill?

I fill and then carve.

I have done carved cakes both ways, if my filling is going to be butter cream then just fill it first, if its something totally different like fruit or custard then I would carve first. HTH

I always fill, then chill, then carve. It's just easier that way and you don't have to worry about breakage moving carved layers around. icon_wink.gif

I fill, then carve. I use fillings that are more like glue for carved cakes, buttercream, thick preserves or preserves mixed with buttercream. I use a slightly thinner layer of filling when carving.

Breakage! Hadn't thought about that. Fill then carve it is! Thanks.

I carve then fill, making sure to cut a small indention the length of the cake to mark where my layers need to line up.
Carving after filling is too messy, cake and filling sticks to the knife and I can't get precise enough.
I chill after I carve and then fill, cuts down on the breakage of layers.

Fill, then carve. That way it's nice and lined up... no chance of getting it a little to far this way or that way after seperating layers.
