First Serious Cake Order: Size And Pricing Help Please!

Hi, I want to someday have my own bakery, but don't yet. I am a circus performer as well and have recently put up a little poster of my cakes at the youth circus that I coach at as an ad for myself to try to get some business and practice as well and today a dad of one of the girls in the circus called me to order a suprise birthday cake for his wife for next Saturday night. Hooray! My first real order!... There will be 50-75 people there, but he is not too worried about there being enough cake for everyone, just lots, since it will be an adult party and more than likely not everyone will want cake (in his words). So basically my questions are how much cake will I need to make (3 Tiers or how big of a sheet, or what)? And how much should I charge him?

First, in Florida it is illegal to sell cakes out your home. Just thought you should know.

Second, with that said, I think you need to do a little more research on selling cakes before taking an order. You should learn what size cake serve how many people. You should also know if your client wants a sheet cake or tiered cake and exactly how many servings he needs. You should figure out your cost, so your able to figure out your pricing.

Ok, thank you for your advice. He has told me though that he doesn't have a sheet/tier preference and is leaving the artistic license up to me. I could chock it up to practice if I couldn't sell, or sell it out of the restaurant I work in though, right? I do know about getting a business liscense and such as I went to college for Hosp./Business, but as a noob, just practicing for family and friends? I guess I don't know, but I have already told him I would make it.

To answer your question about selling out of the restaurant you work at.....you still need to check with your local HD about licensing requirements for "your" individual cake business. Say your boss allows you to "rent" his/her kitchen to make cakes, you are actually running your own business which requires separate licensing and insurance.

I know, it's a lot of red tape for what seems like an innocent cake business.

You may want to reconsider advertising until you get yourself set up legally. You never know who may see your flier and report you. The last thing you want is to be on the HD's radar of "unlicensed" bakers before you even get your business started.

Just some thoughts to ponder.
