when i use any boxed cake mixes i use 4 eggs insted of 3 and 1 cup of buttermilk in place of the needed amount of liquid. i found this tip in a book and it has never failed me the cakes are extremely moist, no matter what the flavor.

Here is the formula for the mixes:

Keep in mind that these are weighed and not in volume

3 Box Batch

3 lb cake mix

12 oz water

Weight both ingredients into the mixer and mix 3 minutes at slow speed and scrape down the sides

Add;

10 oz water

Add water as mixer is on slow speed until smooth, about 1 minute and scrape down the sides and bottom.

Mix 2 minutes at medium speed

Add;

10 oz water

6 oz Vegetable oil

Add water and oil in mixer at slow speed and mix until smooth, about 1 minute.

Scrape down bowl and mix again 2 minutes at slow speed

You can of course, cut the recipe in half.

Sorry, but I did not get how many layers it will make but I know I made 3 layers of 8 inch  pans with the half recipe.

does this recipe works for all Baker's Plus Mixes?

post #25 of 33

I know that it works for the flavored ones... white, chocolate and yellow. Sorry but I am not sure about the other ones.  you could call the rep for your area and find out for sure.
