I delivered my second wedding cake and dont feel so great. It looked okay but it looked better in my head and at home before it was transported. The groom's leg fell off and I had to stick it back with buttercream!!!!!
The bottom tier cracked but it held up okay. i hid it with frosting.Overall the cake looked okay but my blood pressure is still high..almost feel like I dont want to bake for a while. And for now I hate frosting cream cheese icing!!!!

As I'm sure you learned, cream cheese frosting is very soft. But don't stress. The couple may not notice anything. icon_smile.gif

Oh yeah...I wouldn't ever frost with cream cheese anything. Filling? Yep...but never on the outside.

Will you post a picture? It's probably not as bad as you think. We are usually our worst critics.....others don't notice what we notice.

Don't worry. I hear people say that a cake is never perfect, that something usually doesn't go the way we want it to. Someone said that we just need to get good at fixing our little boo boos. I'm new and have done 4 wedding cakes and each one had that "something" that wasn't what I thought should be perfect. Like you, I got so disheartened I didn't want to make anything..... After a few days I got the courage to look at the pic and it really wasn't as bad as I thought and the bride/groom didn't even notice.

Let's just keep going and learn from our mistakes. Big hug.

Don't be too hard on yourself!!! I NEVER LOVE ANY OF MY CAKES!!! LOL I may be satisfied but never totally!!! Cake is not perfect!! It's just that way by nature... I've done thousands of cakes and i can asure you that I will notice every flaw and crack and short coming! the client... well they are normaly just amazed at how "perfect" it looks! Cake decorators are their own worst critics. (atleast I am anyway) I'm sure they will be happy with it. and even if it wasn't perfect, you learned something.... NEVER CREAM CHEESE !!!!!!!! LOL

I feel the same about cream cheese. It's got a mind of it's own. I'm sure it was wonderful. All we see are the flaws, but others really do love it!

Stands by _Jamie_. I will *not* for any amount of $ put cream cheese icing on the outside of a cake. I let a bride talk me into it once. Once. I learned my lesson.

I too refuse to ice a cake in cream cheese unless it is like a carrot cake with nuts on the side. Cream cheese filling - yes, cream cheese icing - heck no.

If you were able to fix it without anyone really noticing your fine! I don't think any of us will ever be 100% pleased by our cakes

Oh, me too! Never again. Mine sagged down to the bottom and looked like an old lady's ankles!! That stuff is a regular nightmare on the sides of a cake. Filling only!!

The *ONLY* Cr ch icing I ever would use is Earlene Moor's recipe. To me it has little cr ch taste but handles like b'cream.

yep i just did a cake yesterday with cream cheese icing under fondant and it was an aweful consistency, after a little while mine was bulging down the bottom too. I am on the hate cream cheese frosting band wagon at the moment too lol

I frosted one in cream cheese frosting one time and there was hell to pay. That client was a nightmare! I will never ever ever do that again! icon_biggrin.gif

I'm definitely not a fan of cream cheese as anything other than a filling, but I have been able to use it if the client insists.

I use my favorite crusting BC recipe and add just a small amount (say 1/2 to 1 - 8 oz. bar depending on the size of the BC batch) in lieu of the same amount of crisco & butter (i.e. use 8 oz. cream cheese, take away 4 oz. each crisco & butter). An absolute must is to use meringue powder though - otherwise, forget even trying!

Again, not my favorite because it doesn't do nearly as well as BC in high heat/humidity, but some clients gotta have it....

I LOVE to eat cream cheese icing but i hate to frost with it. I recently did a 4 tier square wedding cake frosted entirely in cream cheese frosting. I had a horrible time. I did finally figure out how to get it to work but it took me forever! The bride was thrilled with how smooth it was and I was just hoping she didn't notice all of the flaws.

I think someone else mentioned it, but I now mix cream cheese icing with buttercream. Tastes great, and smooths easier.

I just did this wedding cake w cream cheese frosting. It turned out alright. It did crust nicely. I used the crusting cream cheese recipe I found here on CC.

LOL, I feel the same way about Cream Cheese frosting as you guys do....Horrible! I now mix cream cheese with Rich's base chantilly. It still has the nice creamy flavor of cream cheese but with stability.


The first one is with Rich's and the second disaster is without!

I'm one of those people that says "uh uh" to my brides when they say cream cheese icing. So far every bride that has even uttered cream cheese icing...I've redirected and said.........what about filling the cake with cream cheese icing or a cheesecake mousse? The cheesecake mousse so far has made them all forget about the cream cheese icing! lol

Geez after seeing that picture, I don't think I will ever frost anything other than a 2 layer carrot cake with cream cheese icing!!!!

I hate the fact that it has to be refrigerated also. Sometimes that is just not conveinent.
