Hello everybody!
I have a request for a cake with whipped cream frosting instead of BC; I have never made this before and am so uneasy about it! Silly huh, ask me to do fondant and I am all happy!
I am nervous about piping with this type of frosting, even borders. I am worried the fondant decorations I have to place on it (top) will sink and look bad, and again, worried the piped borders and designs on the side won't hold their shape!
Does anyone have a recipe for a whipped cream icing/frosting that holds up well like bc? Eek! I hate whipped icing, and always considered it something only grocery store bakeries used LOL! Never thought I would get a request for the stuff!

Actually, most big box bakeries use Rich's Bettercreme for their whipping icing.
Bettercreme is shelf stable for 5 days, so it's much more user friendly than whipping cream icing which must be kept under constant refrigeration.
I don't know of any members who place fondant decorations over whipped cream.
However, there are a few members who not only use fondant accents but fonant cover entire cakes frosted with Bettercreme.
Rich's Bettercreme is available in either RTU (Ready to Use) prewhipped buckets at Sam's Club bakeries (have to ask in that dept.) Or in liquid form (usually quarts) that you whip at home, available at Gordon Food Service or online.
Is it really called Bettercreme??
