I keep finding cake recipes that start with a box of white cake mix. What can I substitute with home ingredients instead?
I don't want to run out and buy boxed cake mix when I have a 25 lb bag of pastry flour in my freezer.
Take it down the logical road.
"A box" of cake mix, when made up according to box directions (add egg, oil and water) equals enough batter to make two 8" rounds. So if you have a scratch recipe that makes enough batter for two 8" rounds, there's your substitution.
The only thing you have to watch for is the recipe directions and if they include the same amt of eggs/oil/water as the box directions call for and/or if they say "prepare box mix according to directions."
Some logical thinking should get you to where you're going, ok.
