I love the shop Kat... wish I lived up the road (though I'd weigh 900 pounds since I LOVE gelato *chuckle*)

If I ever make it down your way I will be sure to stop in for a scoop and other various yummies!!

They did a great job and your place looks great. Will we be able to see the full video when it runs? Will they have a feed on their website?

It was done for " Our State" which is the PBS affiliate here. I don't think it will air outside of North Carolina, and I don't watch enough TV in general to grasp the whole streaming TV thing... icon_rolleyes.gif

OMG- I just realized that I made a version of your ram cupcakes for a person that I work with. She brought me a pic from a alumni magazine that she gets and it had your bakery advertisement w/ the ram cupcake. I hope you don't mind!!! icon_smile.gif I have a pic of them somewhere, I'll have to get it and post.... she had me make them and drove w/ them 2 states away for a tailgating party!! Now I know who to give credit to!!!

I work out of my house in Burlington and am always tempted to take a trip to visit yout guys. My MIL LOVES gelato. We may have to take a trip there. My goal is to open a place in Burlington or Greensboro once my youngest goes to kindergarten.

Well now I wish I would have known that.....I charged her $3.50 a piece! I'm sure after 2000 of them you could whip them up in your sleep!! LOL I'll find the pic and post!

Loved the video! You have such a wonderful shop!!! I would love it if you could tell me how you make the "Hot Fudge Sundae Cupcakes" It is too funny, I watched the video 3 times, on the third time I paused it on those cupcakes and I still have it paused in another window with the close up of those cupcakes. I think they are so cute and I would really like to make some. Would I pipe buttercream on in a icecream cone fashion, then pour melted chocolate overtop?

Hot fudge Sundae cupcakes have a large plain tip swirl ( Ateco 806 for those who are curious) of house buttercream, which is a modified IMBC. ( It is important that it be a higher fat buttercream for it to set up right). We pop them in the blast freezer for about 5 minutes so the BC is hard on the outside and drizzle ganache to make it look like hot fudge...sprinkles and a cherry..et volia!

Ohhh I love gelato! As soon as it warms up a bit I am going to stop by for some...delish! Did you know there is a gelato shop in Charlottesville, VA? I always stop by when I am in area. I don't remember the name but it's on the left...haha..Haven't been in awhile though and you certainly are a lot closer. That was a very nice piece.

We sold about 100 wedding cakes, and we took in about $20,000 in cash in the last two weeks of December, so it worked out great for us. I take on two interns from Johnson and Wales, and this is excellent experience for them to do A LOT of tiered cakes. Most of our work is just too specialized to let an intern at it, but by limiting the designs and height, it gives them 3 or 4 a week to work on, which is great.

I forgot to mention... I HATE WEDDING SHOWS...HATE HATE HATE THEM I don't like people touching my $3,000 cakes and breaking them, I don't like how grabby and rude people get, the ones that just point and grunt at flavor samples. It is absolutely a necessary evil of the business, but we are just about at the point that we won't go to the big cattle call shows, just the invitation only shows like the Umstead show and the Carolina Inn show...the rest just don't have the smae impact. Too many bakers are there.

That was SUCH a great idea! Can I copy it next year? (hahaha) We did our own specail and it booked up our spring really well, and got us a TON of grooms cakes orders which is wonderful! (they cost more then the wedding cakes sometimes!)

I agree with you on the wedding shows. you HAVE to do the January show, or everyone starts gossiping that you have gone out of buisiness! We are just going to stick to that one and some of the smaller shows that the bridal magazines hosts (we get more quality brides from those shows and they are more fun to do) We don't do the Carolina Inn show because we just dont do that many cakes for that side of town (it takes an hour to get to the Carolina Inn and we get bigger and better cake orders from the downtown Sheraton and the Radison hotels, which are 20 minutes away) The Umstead show is SOOO Pricey! Do you get many orders from it? I know the Umstead themselves has an exclusive with a bakery so you can't really book cakes with them. I am sticking to only 2-3 shows a year and a couple of Galas. Its crazy, I get a request every week from some charity to do some sort of Gala!!

Because we are a preferred vendor for several of the hotels, I don't get charged to attend them, which is awesome, since I always do at least one new dummy for a show, and I am always in for about 600 or more samples, plus gelato.

To me it is an invitation if I get to come and don't have to pay. If I have to pay, it is advertising sales, and that budget is VERY tightly regulated.
